Waldorf Salad

This is a wonderful recipe for the classic Waldorf salad. It’s full of apples, grapes, green onions, celery and walnuts. It’s perfect for summertime BBQ.

Ingredients -

3 Granny Smith Apples, peeled, cored and chopped
1 Tablespoon Lemon Juice
1 Cup Seedless Red Grapes
2 Stalks Celery, chopped
2 Green Onions, chopped
2 Tablespoons Mayonnaise
2 Tablespoons Plain Yogurt
3 Tablespoons Apple Juice
1/4 Teaspoon Celery Seed
1 Bunch Watercress, trimmed and chopped
2 Tablespoons Walnuts, chopped

 
Preparation:

1. Combine the chopped apples and lemon juice in a large bowl.

2. Add the grapes, celery, and green onions to the bowl and toss.

3. Whisk together the mayonnaise, yogurt, apple juice and celery seeds in a small bowl.

4. Spoon over the apple mixture, and gently toss to coat.

5. Wash the watercress, and dry thoroughly.

6. Arrange the greens on individual salad plates and mound the apple mixture on top.

7. Sprinkle the salads with the chopped walnuts.

Watercress is from the cabbage family and most related to mustard. It is high in iron, calcium, folic acid, and vitamins A and C and is said to protect the body from certain cancers.

Walnuts

The best way to chop walnuts is to put them into a coffee grinder and pulse until they are coarsely chopped. Make sure you clean the grinder out first or your walnuts will take on a whole new flavor.
