Tomato Feta Salad

The combination of balsamic vinegar, basil, sweet onion, tomatoes and feta make this salad recipe a keeper. It’s healthy, sweet, tart and oh so good.
Ingredients -

2 Tablespoons Balsamic Vinegar
1 1/2 Teaspoons Fresh Basil, minced
1/2 Teaspoon Sea Salt
1/2 Cup Sweet Vidalia Onion, coarsely chopped
1 Pound Grape or Cherry Tomatoes, halved
2 Tablespoons Extra Virgin Olive Oil
1/4 Cup Feta Cheese, crumbled

 
Preparation:

1. Combine the vinegar, basil and salt in a medium bowl.

2. Add the chopped onion.

3. Toss to coat.

4. Let the mixture stand for 5 minutes.

5. Add the tomatoes, oil and feta cheese.

6. Toss to coat.

7. Refrigerate for 1 hour.

8. Serve with a slotted spoon and enjoy.

Make sure that you purchase a good quality balsamic vinegar. It sure makes a difference in the taste and quality of the dishes that you use it in. Since it is so stron a little goes a long way so you can have a bottle around for a long time.
