Greek Salad

This is a fantastic recipe for Greek salad. It’s tangy and tastes wonderful if you use fresh and delicious vegetables during the summer.
Ingredients -

1 Head Romaine Lettuce, rinsed, dried and chopped
1 Red Onion, thinly sliced
1 Can Pitted Black Olives, (6 ounce)
1 Green Bell Pepper, chopped
1 Red Bell Pepper, chopped
2 Large Tomatoes, chopped
1 Cucumber, sliced
1 Cup Crumbled Feta Cheese
6 Tablespoons Extra Virgin Olive Oil
1 Teaspoon Dried Oregano
1 Lemon, juiced
Fresh Ground Black Pepper, to taste

 
Preparation:

1. Combine the Romaine, onion, olives, bell peppers, tomatoes, cucumber and cheese in a large salad bowl.

2. Whisk together the olive oil, oregano, lemon juice and black pepper.

3. Pour the dressing over the salad.

4. Toss and serve.

 


Cooking Tip

Can't find Romaine Lettuce?

For this salad if you cannot find romaine lettuce you can use radicchio or arugula. It does add more of a kick but for those tastebuds that like a little more adventure then here is your solution.

Feta
Feta has a really long shelf life so find the sales where you get more for your money. There are a million recipes out there that call for this salty and pungent cheese.
