Fennel And Watercress Salad

Fennel is a wonderful licorice flavored vegetable and it makes the best salads. Adding the cranberries and the different vinegars makes for a taste explosion in your mouth.
Ingredients -

1/2 Cup Dried Cranberries, chopped
1/4 Cup Red Wine Vinegar
1/4 Cup Balsamic Vinegar
1 Tablespoon Garlic, minced
1 1/4 Teaspoons Sea Salt
1 Cup Extra Virgin Olive Oil
6 Bunches Watercress, rinsed, dried and trimmed
3 Bulbs Fennel, trimmed, cored and thinly sliced
3 Small Heads Radicchio, cored and chopped
1 Cup Pecan Halves, toasted

 
Preparation:

1. Combine the cranberries, red wine vinegar, balsamic vinegar, garlic and salt in a bowl.

2. Whisk in the olive oil.

3. Combine the watercress, fennel, radicchio and pecans in a large salad bowl.

4. Stir the vinaigrette and pour over the salad.

5. Toss well and serve immediately.

Cranberries
Buy things like dried cranberries at a place like Costco that sells in bulk. They have a wonderful shelf life and are perfect in so many recipes besides this wonderful salad recipe.

Pecans
Take a look at both toasted and untoasted pecans in your local grocery. They sometimes have specials on either and if they aren't toasted it's a snap to make them that way.
