Coconut Salad

This is a wonderful and refreshing coconut salad that is a sweet blend of coconut and lychee’s. It’s great for a hot summer day as a snack or a side dish to a nice sandwhich or cup of soup.
Ingredients -

3 Cans Whole Lychees, (11 ounce), quartered
6 Cans Canned Grated Coconut in Syrup, (3.5 ounce)
1 Cup Heavy Cream

 
Preparation:

1. Toss together the coconut meat and the lychees in a medium bowl.

2. Stir in the heavy cream.

3. Chill for two hours in the refrigerator before serving.

 


Cooking Tip
Coconut
You can adjust the amount of coconut to your liking. Sometimes I only use 1/4 cup and you don’t have to use Lemon jello. All flavors are good.
