Cobb Salad is a classic that you just can’t go wrong with. The avocados, bacon, hard boiled eggs and the blue cheese just can’t be beat. I think it’s a keeper.
Ingredients -
6 cups of Lettuce (finely shredded)
2 Cups Cooked Chicken (cubed)
3 Hard-boiled Eggs (chopped)
2 Medium Tomatoes (chopped)
1 Ripe Avacado (chopped)
1/4 Cup Crumbled Blue Cheese
4 Slices Bacon (crisply cooked and crumbled)
Lemon Vinaigrette
1/2 Cup Vegetable Oil
1/4 Cup Lemon Juice
1 Tablespoon Red Wine Vinegar
2 Teaspoons Sugar
1/2 Teaspoon Salt
1/2 Teaspoon Ground Nutmeg (dry)
1/2 Teaspoon Worcestershire Sauce
1/4 Teaspoon Fresh Ground Black Pepper
1 Clove Fresh Garlic (finely chopped)
Preparation:
1. Shake all ingredients in tightly covered container.
2. Refrigerate at least 1 hour to blend flavors.
3. Divide lettuce among 4 salad plates or shallow bowls.
4. Arrange remaining ingredients in rows on lettuce.
5. Serve with vinaigrette.

Store Bought Vinaigrette
Hey if you don’t have time to make the vinaigrette don’t worry about it. All you have to do is use 3/4 cup of one of your favorite store bought vinaigrettes. I don’t think anything could make a cobb salad taste bad.

Pre-Cooked Chicken
On the same note if you are in a hurry just buy pre cooked and cubed chicken. They even sell hard boiled eggs that are already made for you. Takes the fun out of making it but it sure does save time.
