Bow Tie Pasta Salad With Tuna

I love pasta and I love tuna. Plus I really like cold pasta salads for lunch. This is a great one and it has lots of layers of flavors and lots of nice textures.
Ingredients -
1 Pound Bow Tie Pasta

Dressing:
1 Can Tuna Packed in Oil (6 oz)
1/4 Cup Red Wine Vinegar
1/4 Cup Extra Virgin Olive Oil
2 Tablespoons Honey Dijon Mustard
3/4 Teaspoons Kosher Salt

1 Can Chickpeas (15 oz , rinsed)
3 Large Tomatoes (cut in chunks)
1 Large Cucumber (cut in chunks)
Feta Cheese (8 oz , cut in cubes)
1 Cup Red Onion (thin slices)
1 Cup Basil Leaves (slivered)

 
Preparation:

1. Cook pasta according to the package directions.

2. Drain.

3. Rinse the pasta under cold water.

4. For the dressing drain the oil from the tuna into a bowl.

5. Reserve the tuna.

6. Whisk the remaining ingredients into the oil.

7. Add the pasta to bowl.

8. Then the remaining ingredients.

9. Add the tuna and break up.

10. Toss to mix and coat.

11. Serve salad at room temp.

 


Cooking Tip
Chickpeas
The recipe calls for a can of chickpeas. Chickpeas are also known as Garbonzo beans so if you can’t find “chickpeas” in the aisle try looking for the other name.

I love Feta! I love cheese who am I kidding? I’ve also tried adding blue cheese to it and it tastes great!
