Black Eyed Pea Salad

There are so many textures in this salad that it is wonderful. The spicy chili powder and hot pepper sauce make a fantastic dressing. This is one that you are going to enjoy.
Ingredients -
Small Shell Pasta (cooked and drained, 6 ounces)
1 Can Black-Eyed Peas (rinsed and drained, 15 ounces)
1 Cup Sliced Green Onions
3/4 Cup Cucumber (peeled, seeded, diced)
3/4 Cup Green Bell Pepper (diced)
3/4 Cup Tomato (seeded and diced)
1 Small Jalapeno Pepper (seeded and finely chopped)

Dressing:
3 Tablespoons Canola Oil
1/4 Cup Red Wine Vinegar
1 Teaspoon Sugar
1 Teaspoon Dried Basil
1 Teaspoon Chili Powder
1 Teaspoon Hot Pepper Sauce
1/2 Teaspoon Seasoned Salt

 
Preparation:

1. Cook Pasta according to the package directions.

2. In a salad bowl, combine black-eyed peas, green onions, green pepper, tomato, cooked pasta, cucumber, and jalapeno pepper.

3. In a jar with a tight-fitting lid, combine the dressing ingredients and shake well.

4. Pour the dressing over the salad and stir to coat.

5. Cover and refrigerate for at least 2 hours before serving.

If you want more product for less money try buying dried black eyed peas and soak and cook them on your own.
