Asian Salad

This is an amazing salad to use as a side dish to a great Chinese theme. It has great texture and a wonderful flavor. Cashews are also great if you aren’t into sliver almonds.

Ingredients -

2 Packages Ramen Noodles (crushed)
1 Cup Almonds (slivered)
2 Teaspoons Sesame Seeds
1/2 Cup Butter (melted)
1 Pound Napa Cabbage (shredded)
1 Bunch Green Onions( sliced)
3/4 Cup Vegetable Oil
1/4 Cup Vinegar
1/2 Cup Sugar
2 Tablespoons Soy Sauce

 
Preparation:

1. Over low heat in a medium skillet brown the ramen noodles, sesame, almonds and sesame seeds with melted butter. 2. Once browned remove them from heat and cool. 3. In large bowl add the shredded Napa cabbage and chopped green onions. 4. Bring vegetable sugar, vinegar and oil to a boil for 1 minute. 5. Cool. 6. Add the soy sauce mixture. 7. Toss to coat. 8. Serve.

 


Cooking Tip
Cucumber
Before you cut up the cucumber taste it. The skin may be bitter. If this is the case you can peel it then slice. The salad still tastes wonderful without the skin on it.

When you are at the market make sure that you select very firm cucumbers. They last in the fridge generally up to 4 days so if you are shopping and plan on making the salad at a later date you want to make sure you still have a good cucumber.
